Jaggery is rather a tastemaker and color maker than being just a sweetener. It is a concentrated product of cane juice. Without separation of the molasses and crystals, it is unprocessed so considered as a healthy replacement of sugar.

It is a more complex form of carbohydrate than plain sugar. So it is digested and absorbed gradually and releases energy gradually. It is medically advisable to prevent from diabetes.

Jaggery contains trace amounts of micronutrients including iron, calcium, potassium, magnesium, phosphorous, protein, fat and Vitamin B12. Jaggery also contains reducing sugars including glucose and fructose (10-15%) as a carbohydrates.
